Panakuchen Panakuchen sis boom bah. A few years ago my husband said, “I have some gift points to use on one of my credit cards, I would like you to pick out the gift that we get. Can we please get the griddle?”. Electric griddle, are you kidding me? Who wants one those ridiculous things? So I got the electric griddle. I can tell that I was immediately won over by its ability to make delicious, perfectly browned, lacy edged pancakes. And pancakes is all that I use it for. It makes 8-10 at a time and the cakes are perfect!
Gluten-free Pancakes
Ingredients, makes 12 medium pancakes:
1 cup My GF Flour Mix
2 tsp. Baking Powder*
1 tsp. Baking Soda
1/2 tsp. Salt
2 T. Sugar
1 cup buttermilk**@
1T. Oil***
1 Egg, beaten
Crisco or Palm Shortening or oil and a paper towl
Method:
Start heating your griddle to between 325-350 degrees or start heating your pan. Mix all dry together in a bowl. Mix all liquid together. Pour the liquid into the dry and mix well. With the paper towel wipe some of your greasing agent onto your griddle or pan. Ladle on your pancake batter making as large or small or Mickey Mouse pancakes as you would like. Wait for the bubbles, flip, wait until cooked through. Flip across the room and have someone catch them on a plate. Slather with maple syrup or Aunt Jemima, honey, agave, butter, jelly or whatever and ENJOY!
*I use Clabber Girl. I have tried aluminum-free baking powders and they always make my mouth feel weird and squeaky. Just not a fan.
**For puffy pancakes use 1 cup, for thinner lacier pancakes add an additional 1/4 cup.
***I use olive oil, but you can use whatever you favor.
@If you need casein-free pancakes, put 1 T. Vinegar in a cup then pour in soy, rice, or hemp milk up to the 1 cup line. Heat on stove lightly or throw in the microwave for about 30 seconds. The vinegar will slightly curdle the milk substitutes making pseudo buttermilk.
